Can I instruct IntelliJ IDEA to ignore (or hide altogether) Ultimate plugins? It makes no sense while one's got no Ultimate subscription, and it's annoying to keep deselecting them manually, per each update.

Unfortunately, it is not possible currently. There is a report filed for this issue: https://youtrack.jetbrains.com/issue/IJPL-60554.
