When I open the deployment menu I have options to upload, etc to the remote server I have set up as well as upload, etc options followed by ... rather than a server name.
Why do I get the ... versions showing up, and how do I get rid of them?

Please post a screenshot and point to the issue.
It's not very clear what you are having there...
You need to go to Settings | Build, Execution, Deployment | Deployment and mark one of your remote servers as default to have its name automatically suggested.
I have set up the "DC2 UKREW v2" server as defaul server in Settings, which is presumably why that one is showing in the menu. My question is how do I get rid of the ... entries (see screenshot)?

No way .. unless you will have only single server there (delete the rest entries)
Hmm, so why on another project on my dev machine (so all the same remote servers are still avaiable) does the menu look like this?
No concrete answers until you show details.
But it has always been like that for me: if I have more than one server defined (or no default server set) then the "..." entry will be present.
Maybe in another project the other entries do not have mappings set up or whatnot (and therefore the entry cannot be used as it's not setup properly). Need to see the details.
Based on your replies I have gone through all my projects and made the remote server for each project visible only to that project. That has tied each server to just one project. As expected based on your replies, with no possible alternatives, the "..." entries on the deployment menu disappear.
