I am an absolute beginner.

I just learned Java. I am working for a small company that has all their data in Microsoft Access. PMP Payslip

I am wondering if it is possible to use IntelliJ Community Ed. with the Database Navigator Plugin to connect to an Access Database and do things like pull data for use in GUI applications, update & create tables, build queries, etc.

To connect to MS Access from java, one would need to use jdbc-odbc database driver bridge. It helps to connect to databases, not supporting jdbc drivers. Looking by the plugin's page, it should be possible to use connect to any database that support jdbc driver (the feature is currently marked as experimental though). So you can try to configure such connection using jdbc-odbc driver for MS Access. You can try looking some resources about this, like
