Clone Projects on new install ?
Switching from old PC (X) to a new install on new PC (Y)
the DG projects on X - is there a way to clone them on Y ?
or do I just move the project directories?
What about consoles ? - do I just copy/paste “…Roaming\JetBrains\DataGrip2023.2\consoles” directory ?

You can use git to clone your project from a repository onto a new machine:
https://www.jetbrains.com/help/datagrip/clone-gitlab-project.html
https://www.jetbrains.com/guide/java/tutorials/creating-a-project-from-github/clone-from-github/
Thanks but that's not helpful & getting off topic a bit.
Last time I checked Git is not a JB product.
Please assume I don't use Git.
You can alternatively copy the project directory:
https://www.jetbrains.com/help/datagrip/working-with-projects.html#project_directory
You can copy the IDE settings via File - Manage IDE Settings. To copy the data sources, please use the means mentioned in this section
https://www.jetbrains.com/help/datagrip/managing-data-sources.html#share-data-sources
> This plugin
what plugin ?
https://plugins.jetbrains.com/plugin/13173-git
Got solutions?

Basically did what I said in my question:
copied project directories in "C:\…\DataGripProjects" and the consoles directories
