I did manage to set environment variable for specific scripts in the 'Edit Configuration' dialog, but i'm looking for a method to set variables globally for the remote interpreter

There is currently no configuration settings for that. Please vote for https://youtrack.jetbrains.com/issue/PY-32453/Feature-Request-Add-Environment-Variables-to-Interpreter
