Documentation for Live Templates
I started to create my own live templates and discovered that when editing variables there is a drop down list of expressions I can use. Where can I find the documentation for these? I'm finding docs for ReSharper and PHP and other JetBrains products but not AppCode.

we are currently working on AppCode help, but it's not ready yet.
Meanwhile, you can find info on the LIve Templates in IntelliJ IDA help, as AppCode uses the same platform.
