(The last exception I reported turned out to happen only the first time I ran IDEA following an update to Grails, which I do fairly often these days. Subsequent invocations of IDEA don't produce the exceptions.)
I failed to mention that it occurs only when there's an auto-complete pop-up and I type all the attribute name characters myself. The pop-up disappears when I type the equal sign, but it (the '=') is discarded.
It's quite repeatable on my system.

I cannot reproduce it here, do you have any exceptions?
No exceptions are associated with this symptom.

I don't know if this bug was expected to be fixed by the latest release (0.1.12796), but it's still there for me.

Dear Randall,
We've just fixed this nasty bug. Respective changes will take effect in next JetGroovy version available in plugin repository.
Thanks much, Ilya (and colleagues)!
I gotta' say, you folks are pretty efficient.

I hate to tell you this, but the equal-eating bug is still present in build 0.1.12843 of JetGroovy.
