I would like to change the key shortcut Ctrl + S. What I want is to save the project but also update classes and resources. How can I do this?

There is Main menu | Run | Update Running Application action, default shortcut is Ctrl+F10 that you can change in Settings| Keymap. See Specifying application update options.
