I also get this issue sometimes using remote intepreters - even going into the interpreter options and forcing it to display the remote packages doesn't fix it (the 'missing' packages are there). I've noticed it does this on my Apple Silicon Mac but not my Windows computer.

Also, it might be a known issue; please try disabling Help | Find Action | Registry | python.use.targets.api.
Hi, I fixed it by manually running "Rescan Available Python Modules and Packages" after pressing double shift.
