You can't. IntelliJ IDEA does not store any history of the changes to its settings.
Ok, So say I installed a user-created appearance theme that I don't like. How can I reset the client back to original settings?

You could select "Default" or "Darcula" themes in "Settings | Editor | Color Scheme". Also there is "Restore Default" under cog wheel near scheme dropdown
