New UI is hard to read

How do I get back to the old UI? The new UI is painfully bad. The contrast isn't good. You cannot see the frame borders. Light mode lights up my room and is glaring. Dark mode makes it difficult to copy/paste (I teach often).
And startup is unusually sluggish; not sure what's going on there.
