It sounds like IntelliJ IDEA is reopening the last project automatically when you start it. You can change that in Settings → Appearance & Behavior → System Settings, then uncheck “Reopen projects on startup.” After that, IDEA will open the Welcome screen instead of the last used scheme/project. If you only want a specific project to open, you can also pin it on the Welcome screen.
