The file 'empty' is not associated with any file type...
But, I don't need it to be associated with any file type... because it will never have anything in it. I just want to create the file to keep an empty folder in a git repo.

Hi there,
When you creating a file using "New File..." action, it will open that newly created file straight away. That's why it needs to know how to treat it.
Just associate it with a Text file.
