IntelliJ 2020.3 - how do I revert to a non-platform SDK and no indexing?

I just upgraded to IntelliJ 2020.3 and when prompted asked it to use the platform SDK and indexing. However, that conflicts with some things in our local environment.
How do I revert to using my own SDK and no-indexing?
