Does any know where we can find and sort on End of Life (EOL) or End of Service (EOS) documentation for each version of all the Jetbrains products?

There is no such document. There is no end of life for our products. Critical security updates can be provided even for the products that are 5+ years old.
Regular support is available within 1 year since the product release date, but we'll try to help with the problems affecting even older product releases.
Note that if the issue reported is not a critical security problem, there will be no updates provided to fix this issue in the product versions released more than 1 year ago.
