Multiple workspaces in IntelliJ 2020.1

Hi team,
Is it possible to have multiple workspaces/separate installations of IntelliJ IDEA 2020.1 in the same machine?
To give a bit more context, I work for my main employer, but also record videos to create programming courses/tutorials.
I'd like to have the recorded videos with the Welcome Screen that IntelliJ would show a user that has no projects or that only has the projects of the tutorials, so I don't want to mix both workspaces if possible.
Is this something that can be achieved?

It would be great to create a specific doc for IntelliJ users, and a bit more updated - some of the locations have changed in 2020.1.
In particular, there is a line about an environment variable specific to a different version of the IDE.
For IntelliJ I understand this should be IDEA_PROPERTIES instead of PHPSTORM_PROPERTIES.
